One of my fave foods in Indonesia. You could
find the recipe on Swiedebie's blog. Swee is now
living in the Netherlands, but came from Singapore.
So, we were and are 'neighbors' ;) Many of the
foods in Singapore and Indonesia are quite similar.
Maybe one or two ingredients are different.
This is the second time I cooked it after I saw
it in Swee's blog ^_^ I remembered, I still had
an instant Laksa spice mix somewhere. I added
lime, so that the soup tastes a bit sour, like my
mom used to cook it. We always take rice noodles
to laksa in Indonesia and my mom made it with
fresh sprouted mung bean, so I did too. I've
prepared the mung bean in the sprouting jar just
on Thursday night, so that they just showed
tiny little roots on Saturday - perfect!! Removed
from the green cover and scald with boiling water,
they taste nuttily.
Oh well, after eating 4 bowls my belly was of
course about to explode!! I just coudn't stop
to eat *lol* My son ate 2 bowls and his friend
1,5 bowls. The friend of my son was SO brave!
He has never eaten such spicy dish (it was even
spicy for me and I'm used to it). So I gave them
bread and cashew nut to neutralize it a bit.
But even after we ate so much, the soup was not
finish yet. All the other ingredients was finish
though. So what to do? The soup is too yummy
to throw away...
So today I made some crêpes (the German version
- they are slightly thicker than the French ones).
Meanwhile I heated up the soup, put some red
split lentil in and boiled it for a while till the water
gone. Once both were ready, I spread the lentil
on the crêpes, add some basils and rolled it.

Leftover dish is yummy!!! ^_^

Read the ingredients in Swee's recipe, sounds delicious! Must investigate this. And your red split lentils crepes... mmm. :~)
